Gournay Style Cheese

French-style cream cheese with roasted garlic and herbs
Ingredients
Garlic Confit
  • 1 whole / 50g garlic
  • 1/2 cup / 120ml olive oil
  • 1/2 cup / 120ml vegetable oil
  • 2 tbsp / 12g spring onions
  • 2 tbsp / 8g parsley (curly)
Spread
  • 1 pack / 225g cream cheese
  • 1/2 cup / 125ml NESTLÉ® All Purpose Cream
  • 1 tsp / 6g MAGGI® Professional Magic Sarap
  • 1 whole / 50g prepared garlic confit
  • 1/4 tsp / 0.5g white pepper
  • 1 tsp / 5ml lemon juice
  • 2 tbsp / 30ml garlic oil
  • 1/4 cup / 22.5g parmesan cheese
  • vegetable sticks, crackers, melba toasts

    Prepare the Garlic Confit: In a saucepan, cook peeled garlic cloves gently in the olive oil until soft and light brown in color. Stir in the spring onions and garlic while oil is still hot. When oil has been cooled, drain oil and save for other uses. Meanwhile, mash the roasted garlic and set aside.

    Prepare the Spread: In a bowl, use electric mixer to beat the cream cheese until fluffy. Add the NESTLÉ® All Purpose Cream, cooked herbs and garlic, MAGGI® Professional Magic Sarap, white pepper lemon juice, lemon zest, garlic oil, and grated Parmesan cheese. Mix until well combined. Adjust seasoning if needed. Adjust thickness with the reserved garlic oil.
